Similar to a traditional Romanian 'zacusca' or vegetable preserve, cooked in a cauldron style pan over a wood fire. This salad is made from flame cooked red peppers, tomato, onion, garlic, sunflower oil & seasoning.
Inspired by a trip to Serbia and their traditional red pepper relish known as 'Ajvar', although here the vegetable are kept as whole as possible, more similar to the well loved authentic, Romanian 'zacusca'.
Made with delicious summer vegetables to preserve the seasons beauty and enjoys the flavours of summer throughout the winter months.
We love this served on fresh bread as a snack or appetiser or as part of a platter with local cheese and cold cuts.
