A traditional vegetable preserve known as 'zacusca' with the delicios addition of honey mushrooms. Honey mushrooms, known as 'ghebe' in Romania, are considered one of the tastiest wild, forest mushrooms. They are a delicacy with a nutty, mushroomy and mildly sweet flavour. They are an extremely appreciated food source that grow in abundance in the oak, linden, ash & birch forests of Romania.

Prepared in the traditional way - over a wood fire in a cauldron like pan known as a 'ceaun' in the village of Idicel, North Transylvania. 100% natural and free from additives. Made at the end of every summer to preserve the seasons beauty and to enjoy the deliciousness of summer through the winter months. We love this served on fresh bread as a snack or appetiser or as part of a platter with local cheese and cold cuts.

Making zacuscă is a complex process with many stages before you arrive with the final delicious product. The vegetables are cooked on the fire and cleaned by hand before reaching the cauldron. The fire has to be kept just right throughout the cooking process so that the flavours and aromas remain alive in the jar for when it reaches the customer.

Flame cooked aubergine, honey mushrooms (ghebe), red pepper, onion, tomato, sunflower oil, salt, pepper, bay leaf

Storage

Store in a cool dry place away from direct sunlight. Refrigerate once opened.
